Titan Knife Technologies says its titanium fillet knives rarely need sharpening and never rust. They feature an expanding-oval-geometry handle that's coarse-feeling for more confident, nonslip control, and a convex grind that keeps more metal behind the edge. When the knife needs a touch-up, any sharpening tool (used only on one side of the blade) keeps the edge sharp. Seven knife options include 6- to 10-inch lengths and straight or curved styles. (A 9-inch curved fillet knife is pictured.) At press time, Titan was offering holiday pricing ranging from $39.98 to $69.98. Personalize your knife with a laser-engraved name or logo for $4.98.
