Titan Knife Technologies says its titanium fillet knives rarely need sharpening and never rust. They feature an expanding-oval-geometry handle that’s coarse-feeling for more confident, nonslip control, and a convex grind that keeps more metal behind the edge. When the knife needs a touch-up, any sharpening tool (used only on one side of the blade) keeps the edge sharp. Seven knife options include 6- to 10-inch lengths and straight or curved styles.
