Porcini Dusted Grouper With Asparagus Risotto

Here is a simple recipe for Grouper or any kind of white meat fish. Sites to purchase porcini powder can easily be found when you do a search for it, and it is inexpensive. The risotto is a packaged product from Trader Joe's that is easy to make.

Porcini Dusted Grouper With Asparagus Risotto

Serves 4

4 ea. 6-7 Oz. Portions of Fresh Grouper

2 TBSP Porcini Powder

Salt & Pepper

4 oz. Vegetable Oil

1/2 Cup Chardonnay Wine

4 ozs Whole Butter

1 Package Trader Joe's Asparagus Risotto

You will first want to prepare the risotto as it needs to rest a little bit before serving. Follow the instructions on the bag and keep the risotto covered and in a warm oven.

Season both sides of the Grouper with Salt & Pepper, then dust a solid coat of the Porcini Powder on both sides. In a medium hot saute pan heat the Vegetable Oil and brown both sides of the fillet. Turn the heat down to low, add the Wine, cover and let simmer for 8-10 minutes until the fish is thoroughly cooked. Drain off the excess oil and then toss the whole butter into the pan to melt. Plate the risotto and then lay the fish on one side of it. Drizzle melted butter around the fish and serve.
