Incredible Lobster Bisque

Here is one of the easiest and one of the best soups you could ever make. The most work is in the cooking of the lobster and removing the meat. The rest will take you 10 minutes.

Incredible Lobster Bisque

Serves 6

2 ea. 1.5-2# Maine Lobsters, cooked, remove meat & chop up

2 oz. Butter

2 Cups Heavy Cream

2 Cups Whole Milk

1 Can Evaporated Milk

1 Cup Clam Juice

1 Tbsp. Paprika

½ Cup Cognac or Brandy

¼ Cup Dry Sherry

In a soup pot, melt the butter on low heat. Add lobster meat and turn up to med-high. When the mix begins to simmer, add Cognac and cook off all alcohol. Add the cream, whole milk, evaporated milk, clam juice, paprika and sherry. Let simmer on med-low heat for 5 minutes and serve with a loaf of warm, crusty bread.
