Fried Green Tomatoes With Grilled Sea Bass, Onions & Herbs

4 Ea. Green Tomatoes

1 Cup Egg/Flour/Milk Batter

2 Cups Italian Style Bread Crumbs

2 Cups Frying Oil

Slice tomatoes, dip in the egg batter, then bread in the breadcrumbs & pan fry in medium high oil 2 minutes per side. Remove from pan and drain on paper towel. Keep warm.

4 ea. 6 oz. Sea Bass or any other Fish Fillet

1 TBSP. Seasoning Salt & Fresh Ground Black Pepper

2 Oz. Olive Oil

1 ea. Whole Onion, Peeled & Quartered

1 Clove Chopped Garlic

1 TBSP. Chopped Fresh Thyme & Basil

4 Oz. Italian Dressing

Marinated fish fillets & onions with all ingredients for 1 hour. Pre heat grill on high and make sure to clean and spray down the grill grates with Pam non-stick grill spray. When the grates are hot, place the fillets & onions on the grill and cook for 3 minutes and then turn the fillet 90 degrees, so that you can create a square grill pattern on the fish. Make sure the fillets are cooked through, using a battery powered thermometer. The onions may need a bit more time but you will want to cook them until the are soft.

Place 2-3 fried tomato slices on each plate, then top with the grilled fish fillet. Drizzle some extra dressing over the fish and serve.
